What is in Chorizo? ?

What is in it? I am petrified to try it because of what I heard was in it... I heard it was all the nasty bits and discarded parts of animals in a intestinal casing. I am someone who has not eaten a hot dog in 11 years because I was told that the "erythorbate" used in hot dogs was earth worms, used as a natural preservative. I heard this when I was 9, the same time that I was told that they put cow hooves into bologna.. which I have not eaten since. Even if you told me that it was the most magnificent meant put into the stuff, I probably would not be able to eat it... so be HONEST!!! WHAT IS IN CHORIZO?????
